This can be done today. Open the task, put your cursor on the Due Date line and backspace until the field is clear.

You can now choose up to 25 colored labels per task in Planner and Planner tasks in Tasks in Teams. More labels allows for greater flexibility when organizing tasks. Use labels to flag risks, signal delays, help fine tune task prioritization, clarify accountabilities, or categorize tasks around a theme spanning multiple buckets. Anything you can think of that requires color-coding and tagging tasks, labels can help.
More labels has been a top customer ask and we’re happy to make it available now to all organizations. Try it out in the mobile and web/desktop versions of Planner and Tasks in Teams.

I agree that there should be some tracking ability to know when due dates are modified. Hard to measure time to complete if users can simply move the Due Date.
Alternatively, it would be useful to trigger a notification if the Due Date changes. I was trying to do this through Flow but it doesn't appear to be available.
