This limit has been removed – users can now have thousands of tasks assigned to them.
We’re continuing work around performance and actively monitoring how many users hit this limit. So far, we only have seen users with unchecked Flows/automated task assignments hitting this limit.
We are planning on publishing formal documentation around all of our Planner limits once we’ve completed more performance work, but don’t have anything to share at this time.

It's amazing it took over two years to remove that limit. Not sure how MS can justify such development strategy. And still, it took over a year and MS hasn't published what the limits are from what I can tell. A user had to create some tasks and show the limits.
