On-Prem Exchange means I can't use Planner conversations or calendar
Better support for hybrid environments please, use SharePoint calendar rather than an Exchange Online mailbox account? SharePoint calendar can then by Synced with Outlook desktop client? support for changing the domain of the plan email address to another domain.
Yes, please make planner fully functional with On prem.

Same issue here, started to use Planner, but then saw an imediately issue with comments, it seems that it exists alot of limitations to hybrid users.

The same here. Conversation, Calendar and members are not working in our hybrid environment, but I suspect Microsoft have no intention of solving this as part of their agenda to move us all to a Azure / Office 365 only environment... This issue has not been touched in a year now.
We use both on-prem and 365 email. On-prem users cannot send replies to comments in group, see group in Outlook, or use calendar. We must use local email for legal reasons as in Brendan's comment.
We also use a different email program, and thus have the exchange license turned off. So the calendar within Planner does not appear to function.
In house exchange is vital - I am sure Microsoft wants to move us to the cloud but for legal reasons that may not be possible.
