Add new progress descriptions
The progress descriptions are too simple. You should be able to create new ones, like planning, design, testing etc.

Yes! we absolutely still need this :-)
A work-around I'm using is to to make my own board with 'status buckets'. I'm using PowerAutomate to update the current 'bucket status' in a SharePoint list to update the progress status. I then use PowerBI to create my own dynamic status dashboard.
Yes! - it's not pretty. It would be much easier if editing of the progress buckets would be possible.

Agree with comments below that need ability to do additional statuses, such as On-hold for instance

This should already be a feature, but you should be able to change the names of, rearrange, and add other progress descriptions. I love having one that says "on hold" or something to give me more buckets to filter large amounts of tasks by.

Increase the amount of the "progress" labels too!
in my case we need something like:
"Started" - "In progress" - "Pending Review" - "Reviewed" - "Completed" -
